Peruvian Flan "Bacon from Heaven"

Makes 8x8 pan
In blender:
1 can evaporated milk
1 can sweetened condensed milk
3 eggs
1/2 cup coconut
Blend for 2 minutes.
Carmel Sauce:

In heavy saucepan cook 1 cup sugar with 2 tablespoons water.
DO NOT STIR THE SUGAR!! It will liquefy and then you can swirl the pan to heat it evenly. Remove from heat when it is melted and golden brown. It will go from golden to burnt very fast. Watch it closely.

Pour golden sugar in pan. Pour milk on top of sugar and bake at 350 for about 35 minutes. Top should be golden and toothpick should come out clean. It mayy still jiggle a little in the middle. PUT PAN IN ANOTHER PAN OF WATER TO COOK.

BEST IF ALLOWED TO COOL.
