Black Bean Tacos

15 ounce can black beans, rinsed & drained

1/2 tsp cumin

1/4 tsp salt

6 corn tortillas

1 Tbs lime juice

2 tsp olive oil

2 cups coleslaw mix

2 scallions, chopped

1/3 cup chopped cilantro (opt)

ground black pepper, to taste

hot sauce, to taste (Tabasco)

1/3 cup crumbled feta cheese

Combine beans, cumin, and salt in a small bowl. Use a fork to partially mash. Divide the mixture between the tortillas, spreading it on ½ the tortilla.

In another bowl, combine lime juice and 2 tsp oil. Add coleslaw mix, scallions and cilantro, and toss well. Season with pepper and hot sauce.

Put a little oil on pan and fry the tortillas bean side up for 1 minute on med high heat. Fold the taco in half and cook 1 minute, flip, and cook 1 more minute.

Fill each taco with coleslaw mix and feta cheese. Add hot sauce to taste.
